Half Baked Harvest's Caramelized Balsamic Goat's Cheese Pasta

I've been on the hunt for a yummy and quick pasta recipe that I can whip up mid-week but isn't as fattening as the one pot bacon and brie pasta we both love! After browsing Pinterest, I came across Half Baked Harvest's recipe for Caramelized Balsamic Goat's Cheese pasta. The pics and description sounded delicious so I was excited to make this.








Yay or Nay: Nay

Massive FAIL for this recipe. The styling in the photos were deceiving - we were both in agreement that we did not like this recipe at all. I was expecting something tangy and rich, but it was more like a dessert pasta dish - sweet and cloying. I think the recipe would have been better without the balsamic sauce/dressing as the mushrooms, garlic and thyme were tasty on their own. I don't think I would try this again with a different kind of balsamic as the dish itself was not good at all.

Country Living's Huevos Rancheros

Happy New Year everyone!

I discovered this recipe a while back and it's been a long time since I made it. It's Mexican but not like I usually know it - burritos, tacos and empanadas. Admittedly I wasn't recipe browsing when I spotted Country Living's recipe for Huevos Rancheros, I was looking for interior inspiration. 

Either way, the recipe looked easy and appetising - not heavy on the cheese and heartburn! 









Yay or Nay: Yay

There are a lot of ingredients and a lot of steps but each one is pretty easy to do. I didn't fry the tortillas as I wanted a lighter option so I baked it. Bad move! Instead of being crispy, the tortilla was hard and chewy. I definitely want to find a better way to bake this to give the same texture as frying it. 

TIP: Fry your eggs sunny side up as the oozing yolk adds to the whole experience!

TIP: Feta cheese works as well as Cotija cheese if you can't find it - I can't so I sub feta for this.

Jamie Oliver's Spinach and Feta Pie

I remember seeing this recipe for Spinach and Feta Pie on TV and I never got the chance to cook it as my living situation at the time didn't allow me to have control of the kitchen! Anyway when I did get the chance I jumped on this recipe. Now, Jamie promised it would be a 30 minute meal which is a big ask! He made it look so easy, would it be like that for me??

Admittedly it took me a few tries to get this down but the instructions aside from the filo pastry assembling is pretty straightforward. Definitely don't skip the baking sheet part as it makes for less cleaning which no one likes after a long day. I do like to part bake mine if I know it'll be for dinner the next night, then reheat and bake the rest of the way on the night you'll eat it.
