Pinch of Yum's Spicy Sofritas

I admit, I have made this before and I totally forgot about this until I saw a pin about sofritas and I knew I had to make it for the site. Every time I make this I seem to change the quantity of one of the ingredients. One time it was the poblano, another was the adobo pepper and both times it was waaaaaaay too spicy. I like spicy but this was burn your mouth off so that you can't taste anything else. I've followed the recipe to the T to make sure I can give you a proper review.

After following the recipe properly, I must admit it had the right balance of everything, just enough heat for the warming or warning tingle! Instead of brown rice I used farro following the cooking instructions on the packet. I did mix the lime juice and coriander and nope the red onion and garlic didn't go into the recipe at all, I only realised they were for the guacamole after I took the pic!

Pinch of Yum's Spicy Shrimp with Cauliflower Mash

I'd read in the weekend paper that it is recommended that you eat at least two and a half cups of veggies a day. I did a quick calculation of what I usually eat in a day and it definitely fell short. Now I consider myself a pretty healthy eater but this scared me a little as I knew I wasn't getting half of that. Anyway, I browsed the net for recipes that would include more veggies and most importantly disguise them for the Hubby. This Spicy Shrimp with Cauliflower Mash ticked the (more) seafood box and the hiding-the-veggies box too, no harm in trying right?

It's meant to be one or the other right, but this divided us both. We both loved the shrimp, it was seasoned well and had a nice kick. However, the mash was, er, interesting. Yes I didn't use the white beans so maybe that affected it but the texture was slightly off. The cornmeal thickened but made it look a little unappetising. Even though I've cut down on my cheese intake, it definitely needed more cheese to add somedepth of flavour and DO NOT SKIP the salt, as I learned the hard way, I can promise you it will be a tasteless mealy slop.

Pinch of Yum's Magic Green Sauce

This is the second part to my cauliflower burger review. The post urged me to make this Magic Green Sauce to go with the burger and it looked easy enough to cobble together. Anything called magic would not need much convincing to make me try it!

Like it says on the tin, pretty much throw everything in a blender and voila! Aside from trying to get the texture right it was easy enough and punch to boot! It got a much better review than the burgers and the hubby asked it to be made again minus the burgers...

Pinch of Yum's Spicy Cauiflower Burgers

Every now and then I'll go onto Pinch of Yum's site to see if there's any recipe I'd like to try. I've tried a couple and they've turned out pretty well. The photo's and styling are always beautiful and inspirational. These cauliflower burgers caught my eye as ticked the healthy box and who doesn't love a burger?! Now, this post is in two parts as she recommended the Magic Green Sauce on top so I had to make this one too!

With some adjustments this would have gotten a better review. I'm not going to lie, it is fairly labour intensive but once you have the routine down it will go faster I'm sure. The biggest issue was that it didn't quite bind and was generally sloppy. When you first get it in the pan to fry, it would fall apart and crumble but it would stay together when once you flipped it. I gave up making patties and put them in a muffin/cupcake pan and that worked much better. In terms of flavour; spicy, no but tasty, kind of in a cheesy bites kind of way.
